Crohn's Quine Cooks: Chicken with Tarragon
Hi everyone and Happy Friday! This blog post was suppose to be posted a couple of days ago but the internet decided to go down, stupid internet ruining my plans. So as you can tell by the title, today's post is a recipe for Chicken with Tarragon which is super easy to make.

Ingredients
- 1tbsp sunflower oil
- 300g of chicken mini breast fillets
- 100ml dry white wine
- 1tbsp chopped fresh tarragon leaves or dried tarragon
- 1/2 chicken stock cube
- 1tbsp coarse-grain mustard
- 100g reduced creme fraiche
- 350g of vegetables such as asparagus tips, fine beans, Chantenay carrots
- 250g baby new potatoes, to serve
Method
- Heat the oil in a deep frying pan, add the chicken and cook over a medium heat, turning the pieces occasionally until cooked
- Add the wine and tarragon and simmer, uncovered, until reduced by half. Dissolve the stock cube in 75ml hot water and add to the pan with the mustard. Cover and simmer for 5 minutes. Stir in the creme fraiche and simmer for 2-3 minutes.
- Meanwhile cook the vegetables as per instructions. Serve with the chicken and new potatoes.
