Crohns Quine Cooks - Chicken Noodle Soup

Hi everyone, hope you all having a good day. I noticed on Twitter and Facebook that a lot of people have been suffering from the dreaded cold and flu so today I though I would share with you one of my favourite healthy soups that always makes me feel better, chicken noodle soup.




Serves: 4
Prep time: 10 minutes
Cooking time: 25 minutes

Ingredients
  • 2tbsp sunflower oil
  • 1 onion, diced
  • 1 skinless chicken breast, diced
  • 1 carrot, peeled and cut into cubes
  • 1 red pepper, cored, de-seeded and cut into small cubes
  • 850ml chicken stock
  • 1 x 85g pack instant noodles with chicken flavouring
  • 1tbsp parsley chopped plus some to garnish

Method
  1. Heat the oil in a large saucepan. Fry the onion until soft, then add the chicken and cook until it turns white.
  2. Add carrot, red pepper and stock, then simmer for 20 minutes.
  3. Add the noodles, flavouring and parsley. Cook for 3 minutes, until the noddles are soft. Garnish with parsley.
