Crohns Quine Cooks - Chicken Noodle Soup
Hi everyone, hope you all having a good day. I noticed on Twitter and Facebook that a lot of people have been suffering from the dreaded cold and flu so today I though I would share with you one of my favourite healthy soups that always makes me feel better, chicken noodle soup.

Prep time: 10 minutes
Cooking time: 25 minutes
Ingredients
- 2tbsp sunflower oil
- 1 onion, diced
- 1 skinless chicken breast, diced
- 1 carrot, peeled and cut into cubes
- 1 red pepper, cored, de-seeded and cut into small cubes
- 850ml chicken stock
- 1 x 85g pack instant noodles with chicken flavouring
- 1tbsp parsley chopped plus some to garnish
Method
- Heat the oil in a large saucepan. Fry the onion until soft, then add the chicken and cook until it turns white.
- Add carrot, red pepper and stock, then simmer for 20 minutes.
- Add the noodles, flavouring and parsley. Cook for 3 minutes, until the noddles are soft. Garnish with parsley.
