Crohn's Quine Cooks: Strawberrry Shortcake
Hi everyone I hope you are all having a grat day. Seeing as Summer has finally come to the UK I thought I would share with you one of my favourite Summer dessert recipes, Strawberry Shortcakes.

Ingredients
- 115g butter
- 50g caster sugar
- 175g plain flour
- 250g mascarpone
- 2tsp clear honey
- 2tbsp milk
- Few drops of vanilla extract
- 400g strawberries, hulled
- 1tbsp icing sugar, plus extra for dusting
Method
- Preheat the oven to 180C/Gas 4. Cover two baking trays with non-stick baking paper.
- Beat the butter and caster sugar until creamy. Add the flour and gather together using your fingertips to make dough.
- Put on a sheet of baking paper and roll out under a piece of cling film to the thickness of a pound coin. Cut out as many rounds as you can using a 7cm cutter.
- Bake for 10 minutes, then leave on the tin to cool for 10 minute. Remove and finish cooling on a wire rack.
- Mix the mascarpone with honey, milk and vanilla. Halve 3 strawberries and set aside. Whizz half of the remaining strawberries in a blender with icing sugar to make a coulis.
- Slice the remaining strawberries and divide between six biscuits, with most of the mascarpone. Top the other biscuits. Dust with the icing sugar and decorate with mascarpone and half a strawberry. Serve with the coulis.
