Crohn's Quine Cooks: Sweet Potato Soup
Hi everyone, I hope you are all having a lovely day. Seeing as it has been a very long time since I last did a Crohn's Quine cooks post I thought why don't to I share a healthy soup recipe that is prefect for the winter months.
This is my favourite soup of all time and when I am having issues with my gut, soup is the food that I always go for because it easy for my stomach to digest.

Serves: 4
Ready in: 30 minutes
Ingredients
- 1 medium onion, chopped
- 1tbsp olive oil
- 15g buttter
- 200g carrots, sliced
- 2 sweet potatoes, peeled and diced
- 2tsp smoked paprika
- 600ml hot chicken stock
- 300ml full-fat milk
- 125g chorizo, diced (optional)
- Crusty bread to serve
Method
- Cook the onion in the olive oil and butter until soft and golden
- Add the carrots, sweet potatoes, paprika and stir to coat, then pour over the stock and bring to the boil. Cover the pan and simmer for 15 minutes or until tender.
- Puree the soup in a blender or processor, then return to the pan with the milk. Season and heat until simmering
- If using, cook the chorizo in a non-stick frying pan until it starts to crisp and the fat runs. Pour the chorizo fat into the soup. Serve the soup in the bowls with the chorizo sprinkled on the top and crusty bread on the side.
